Banana Chocolate Chip Pancakes

This Banana Chocolate Chip Pancakes recipe is made in 20 minutes. The pancakes are soft, delicious, easily prepared, and healthy(ish).

Banana Chocolate Chip Pancakes
This is by far the most tested recipe on this blog. We got the inspiration for these fabulous pancakes from the great Diala Canelo. We got her book Diala’s Kitchen last year. Her banana chia seed pancakes inspired us to start creating new banana pancake recipes too. We first made these pancakes last September, we took photos in October, but we couldn’t find the right time to publish them on the blog, until today. Since then, the pancakes have been on our menu regularly, at least once a week for breakfast. The preparation is so simple, and it takes about 20 minutes from start to serving - so easy. These banana chocolate chip pancakes are on the healthy(ish) side, thanks to the addition of whole wheat flour and brown sugar. However, if your banana is super ripe, you can omit the sugar completely.

What ingredients will you need to make these banana pancakes

You don't really need many ingredients for these easy whole wheat banana pancakes, but they are packed with flavor and all the good stuff for your body and soul.

Flour - In this recipe, we mostly use whole wheat flour, but we still add a bit of all-purpose flour to make the pancakes lighter. However, the richness comes from whole wheat flour so I wouldn't substitute it with the all-purpose flour. Feel free to substitute the whole wheat flour with spelt flour.

Baking powder - it will help the pancakes rise and make them fluffy and delicious. We don't recommend substituting with baking soda in this recipe.

Sugar - feel free to use your favorite sugar. We usually go for cane sugar or brown sugar. Coconut sugar or white sugar works great too.

Eggs - help the pancakes stick together. Use two room temperature eggs.

Butter - we always use unsalted butter and this time was no different. The melted butter makes the pancakes softer. Try substituting with coconut oil.

Milk - full-fat is the way to go. Optionally substitute with oat milk, coconut milk, or other kinds of milk you love.

Banana - is a great source of potassium and a great natural sweetener. Thanks to that, we don't need to add a lot of sugar (if any) to these pancakes. If your bananas are super ripe, feel free to omit the sugar completely.

Chocolate chips - since these pancakes are more on the healthy side, we usually use unsweetened chocolate chips in this recipe. We love Naturally Pam chocolate chips or Lily's Keto Chocolate Chips, but other, semi-sweet chocolate chips will work great too.

How to make banana chocolate chip pancakes from scratch

You need two bowls, a rubber spatula, and a good non-stick pan to prevent the pancakes from sticking. This is how we make them from scratch.

  1. Combine the dry ingredients. In a large bowl, stir to combine both flours, sugar, baking powder, and a pinch of salt.
  2. In a separate bowl, whisk together the eggs, milk, mashed banana, and melted butter.
  3. Combine dry and wet ingredients and place the pan on medium heat.
  4. Pour batter into the greased pan and cook the pancakes.
  5. Serve and devour.

What to serve banana pancakes with and how to make them your own

What we love most about these whole wheat banana pancakes is the fact that you can easily make them your own, they are so versatile.

Feel free to add a tablespoon of chia seeds or a tablespoon of hemp hearts (or both) to the mixture for some extra flavor and nutrition.

Top them with fresh seasonal fruits like sliced banana, and coconut chips. Pour maple syrup over the pancakes for some extra sweetness or dust them with icing sugar.

METHOD

  • make the pancakes batter

In a large bowl, stir to combine the whole wheat flour, all-purpose flour, baking powder, brown sugar, and a pinch of salt. Melt the butter and set aside to cool. In a separate bowl, whisk together the eggs, milk, and mashed banana. Stir to combine, then incorporate the melted butter.

  • add the chocolate chip

Pour the egg mixture into the flour mixture, add the chocolate chips and stir with a rubber spatula until just combined. Don't overwork the batter. Set aside for 5 minutes.

  • make the pancakes

Place a large non-stick pan over medium heat. Add 1/2 tsp of butter and let it melt, then drop about 2 - 3 tbsp (or 1/4 cup) of batter into the hot pan. Repeat the process with the rest of the batter working in batches, making sure you don't overcrowd the space. Cook the pancakes for about 2 minutes, or until the bubbles appear on top, on medium heat, then flip the pancakes and cook for another 30 seconds or until golden brown.

  • serve

Divide the pancakes between four plates and serve as soon as possible. Top them with sliced bananas or other fruits, maple syrup, and coconut chips.
